New Food Friday- Discovering Quinoa

Roasted Mushroom Quinoa Risotto
A Labor of Love

Have you ever made Risotto? 
If you have then you know how time consuming it is. 
All the stirring and stirring. (Thanks Jen!)
Risotto is about consistency. 
It can't be rushed or hurried along. 
It takes patience, young Jedi, Patience.
This recipe came highly recommended by a friend.

It was delicious, warm and comforting.
The smell of butter, shallots and garlic floating in the air.
The sound of dry white wine sizzling in the pan.
Finally seeing the mushrooms glistening with EVOO through the oven door.
And the torture of waiting 45 minutes for the quinoa to absorb the chicken stalk.
But you know know what?
This risotto was worth the wait!
